Six Dishes Deep, When Desi Cooking Becomes Therapy

Nobody warned me that anxiety would smell like caramelized onions.


It starts with one dish. Just something simple, something to keep the mind busy. And then somehow there are four pots on the stove, a tray in the oven and you’re standing there at midnight wondering when you started making a full spread for one person. This is desi therapy.


In a desi household, food is not just food.

It is a love language.

A distraction.

A coping mechanism.

A way to feel in control when everything else is behaving like a badly managed WhatsApp group.


OUR CULTURE

No one say's "Talk about it." They say, "Come eat."

Upset? Cook.

Heartbroken? Eat Ice cream.

Anxious for no reason? Drop frozen nuggets in hot oil. The sputtering is louder than your thoughts.


The Calorie-Dense Coping Mechanism.

I support therapy. Completely. A therapist costs money, requires vulnerability, needs scheduling. But where I'm from, left over nihari reheated at 11pm got to the feelings first.


Is it a calorie dense form of emotional processing?

Absolutely.


But we have systems. We have balance.

For example, you ate curry swimming in oil. Oil? Fine. You eat one less chapati. That’s it. That’s Macro counting. One less chapati and universe is restored. Order has Returned. You are basically an athlete now.


Green tea illusion.

The sacred post feast ritual. Not because it helps because we belief it helps.

Served after a heavy meal, sipped slowly with full confidence that it is communicating directly with your metabolism and turning the clock back.

After oil drenched curry, green tea is a reset button. It doesn’t matter what science says , in our hearts it is raising our BMR by at least 10 folds and we will not be taking questions.

Period.


The Stress tummy nobody talks about.

And yet after all the cooking, all the eating and the green tea the stress tummy remains.

That specific bloat that lines in your mid section when life is heavy. It is its own entity, completely unbothered by one less chapati.


And Somehow It Actually Helps


Six dishes later, the kitchen is a mess, feelings somewhere between the steam and spice but there is enough food to feed the entire extended family.

But here’s the thing nobody says out loud IT WORKS. Not because the food is magic but making of it is.

The chopping, the stirring, the smell of whole spices hitting hot oil,it pulls you into present. It gives anxiety something to do.


And we have a dish for every kind of broken

Biryani ,well science has confirmed that no one has ever had a genuine breakdown mid biryani, it is neurologically impossible.
